Served with cornbread. I made up the recipe. Started with chicken leg quarters. Cooked them in the oven. Pulled meat off of the bones and then made a small batch of broth in the crockpot. Used dried beans that I cooked up the day before.

Ingredients:
Chicken
Chicken broth
Great northern beans
Onions
Green chiles
Cumin
Garlic
Salt
Pepper
Almond milk (Not a ton)
Cornstarch to thicken

Combined broth, onions, peppers, and spices and simmered until onions were getting close to tender. Added beans and chicken and continued t simmer. Added milk and cornstarch slurry at end and simmered until thickened.
