Chicken Leg Quarters

Here is the starting point for the Chicken Salad. Needs tweaking for dairy.

4 cooked chicken breasts, shredded
1/4 c green onion
1 c chopped celery
1 ranch salad dressing packet
1 c mayo
1 c sour cream
1 c craisins
6 hard boiled eggs, chopped

Stir together mayo, sour cream, and ranch packet.  Mix in chicken, green onion, and celery.  Chill overnight.  One hour before serving, add craisins and eggs.

Chicken and Gravy

After the leg quarters are cooked, pull the meat off the bones and make a gravy with the drippings. Combine and simmer.

Gluten Free Potstickers

I was so happy with these!  The rest of the fam wasn’t as amazed but that’s fine.  They can eat the regular ones any old time.  If Mom’s happy, everyone’s happy!  I didn’t have the right flours (since I can’t go to the store) but I did have chickpea flour (which is the one I wouldn’t have expected).  I used a combo of potato starch, arrowroot, and rice flour.  Just dumping to get about a playdoh texture. It turned out amazing.

Chicken Recipes

I thought I made the same dishes regularly but apparently my family doesn’t agree.  A dinner rotation would be nice.  I’ll have to put that together.  For tonight, I’m just posting these recipes.

Lemon Garlic Butter Chicken and Broccoli.  We had this for dinner tonight.  Liked it well enough to make again but not a favorite.

Tweaks:  used a bag of frozen broccoli instead of green beans.  Did not precook, just added when the beans were supposed to be added and cooked it a bit longer.  Used 2 cups of water and 2 bouillon cubes instead of broth.  Also added extra lemon. And used skinless bone-in thighs.

Currently in the crockpots: and

Ginger Peach Chicken.  I called it “Icky Chicken” because I still can’t get used to fruit and meat.  We didn’t eat the fruit and onions but the kids liked the meat in a tortilla with cheese.

Slow Cooker Lemon Pulled Chicken.  Loved it.  Took to Patti’s for dinner.  Served with rice cooked in chicken broth, peas, carrots, and extra dressing.  Definitely make again.

Tuscan Chicken.  Made this for mom and dad the other night:  It was such a hit that I gave mom the printed recipe to make in Mexico!
