I made “pumpkin” muffins from the leftover sweet potato casserole and they went over really well. I’ll have to find that recipe so I have it next year.

I made this recipe with frozen strawberries or blueberries. My blueberry muffin girl liked the strawberry ones better! Just goes to show that kids are a pain :). L said they were good so I had to go off of his judgement since I can’t eat them.

My tweaks were to sub babyfood/applesauce for part (about half) of the oil and I used my mexican vanilla.
