Notes on Napa Valley Chicken. I used more chicken, a red onion instead of white, 2/3 of a can of diced tomatoes, homemade chicken broth, and no wine. Did not thicken up enough, had to thicken with rice flour (since that’s what was out for coating). K liked it, E said it was ok. The adults liked it.
Homemade chicken strips. Didn’t follow a recipe but really liked the coating. Used crushed corn flakes, almond meal, garlic salt, and pepper to coat. Fried in a skillet with oil. K, E, L, and B loved them. I did too. Didn’t share with any other adults.
