I made polenta the easy way.

4 c water (or broth)
1 c cornmeal
1 tsp salt

Bring to a boil, then whisk in cornmeal until it begins to thicken. Then cover and cook on low for 30 – 40 minutes.

I spread it in a greased 7×11 pan then chilled it for a couple of hours. Cut into squares and fried in a pan with oil until browned. Made a dip with mayo, rice milk, and bread dipping spices.

Adults liked it. K did not like the texture. E thought it was ok but not great.
